The Best Dairy- Free Keto Meatloaf

Disclaimer- I don’t know how to cook for under 8-12 people, so most of my recipes will serve a larger amount. Adjust accordingly by using a calculator. I left that fun part up to you! 

  • 4.5 lbs hamburger 

  • 4 eggs (about 1 egg per lb) 

  • 2 TBSP parsley

  • 2 TBSP onion powder 

  • 2 TBSP garlic powder 

  • 2 TBSP Dijon or brown mustard 

  • 1/4c Worcestershire sauce 

  • 1/4c strained pickle juice 

  • 1 small onion diced 

  • 1-2 squirts Sugar Free ketchup 

  • Salt and pepper to taste

Topping option: 

Keto meatloaf glaze (ketchup substitute) 

2 TBSP Tomato Paste 

1 TBSP Apple cider vinegar 

1/4 TSP granulated Stevia 

My kids and their friends ONLY like my meatloaf. It’s never dry, and that’s the ticket! The problem has always been, I never measure or use the same ingredients twice. But, yet, it’s so good every time. In fact, I also always make it keto and always have— and no one ever knows! So, since I have this blog now and literally my young adult kids and their college friends want this recipe, I thought I’d try to make one version and settle on some actual measurements. 

This meatloaf can be made in a traditional meatloaf pan style, mini loaves, or even in muffin tins. Just adjust your time down as your loaves get smaller. 

Also, my advice is either use disposable or meat gloves to manipulate the meat mixture because it freezes your hands. I also have put my hands under warm water approximately 657 times to keep them from frost bite, ha!

  •  Preheat oven to 375° 

  • Spray/coat meatloaf pan(s) with olive oil. 

  • Add hamburger to a large bowl. 

  • Add all ingredients and mix thoroughly. This is important. You want it blended well. 

  • Add mixture to meatloaf pans, patting down into a loaf. 

  • My suggestion is to put it on a baking sheet in case of over spill. 

  • Top with nothing or sugar free ketchup. 

For glaze option for ONE loaf: 

  • Mix together in a small bowl: 

  • 2 TBSP Tomato Paste 

  • 1 TBSP Apple cider vinegar 

  • 1/4 TSP granulated Stevia 

  • Spread on top of meatloaf. We all prefer this option. Even the kids!

Time will depend on the size of your loaf/loaves. For 2 regular size, I bake uncovered and check at 30 minutes. If needed, add more time. Mine usually takes an hour.
